Pigs N’ Pinot Farm Dinner

This years annual Pig N’ Pinot dinner is being hosted again at Pachamama!

Local and organic pork is exquisitely prepared by chef Tim Payne and paired with pinot noir for a truly unique farm dinner experience.

The Menu

Appetizers
Bruschetta with grilled nectarine and bacon jam
Mini bratwurst kebobs
Crispy corn cakes with chorizo

Course 1
Pork Confit Salad with cucumber, peaches, pickled onion, bacon vinaigrette, summer greens

Course 2
Whole pig paella, shoulder, leg, tenderloin, bomba rice, saffron, vegetable bounty from the farm

Course 3
Ole’ fashion chocolate buttermilk cake, bacon caramel, whipped cream

 

About the Chef

Tim Payne is the head chef at Farmer Girl, a local restaurant in Lyons, CO. He brings a dynamic and varied culinary background to the restaurant, as well as a deep commitment to supporting local, artisanal and sustainable food.

As a chef, he specializes in creating simple and straightforward dishes using local ingredients and is consistently changing his menu to accommodate the most seasonal fare.
